Ingredients
|
- 3 Pounds Chicken -- cubed
- 4 Cups Water
- 1 Teaspoon Salt
- 1 Large Potato -- quartered
- 2 Large Carrots -- in large pieces
- 1 Medium Chayote -- in large pieces
- 1 Medium Onion -- coarsely chopped
- 1/4 Cup Mint Leaves -- finely chopped
- 1/4 Cup Cilantro -- chopped

Directions

Cook chicken in water with salt over moderate heat for 10 minutes. Add potato, carrots, chayote and onion. Simmer over low heat for 20 minutes. Add mint and cilantro. Simmer for 3 minutes. Serve with tortillas.
