Guatamalan - Carne Adobado

Ingredients
|
- 2 Pounds Pork -- cubed
- 2 Medium Tomatoes -- chopped
- 10 Medium Tomatillos -- chopped
- 1/4 Teaspoon Ground Cloves
- 1 Teaspoon Pepper
- 1/2 Teaspoon Cinnamon
- 4 Cloves Garlic -- finely chopped
- 1 Large Onion -- thinly sliced
- 1/4 Teaspoon Achiote -- dissolved in
- 1 Cup Water
- 1/2 Cup Vinegar
- 1 Teaspoon Salt
- 3 Tablespoons Olive Oil

Directions
|
Cook pork in dry skillet until well browned about 5 minutes. Set aside. Make a smooth sauce with the tomatoes, tomatillos, cloves, pepper, cinnamon, garlic, onions, achiote, water, vinegar and salt. Pour over the pork and marinate overnight. Remove pork from sauce, Heat oil and brown pork for 10 minutes. Add sauce and cook for 1 hour on low. Serve with rice and tortillas.
