Ingredients
  • 2 Pounds Beef Chuck Roast -- cubed
  • 1 Tablespoon Olive Oil
  • 1/4 Cup Cider Vinegar
  • 4 Cups Water
  • 1 Teaspoon Salt
  • 1 Small Onion -- sliced
  • 2 Large Tomatoes -- sliced
  • 5 Medium Tomatillos -- sliced
  • 2 Cloves Garlic -- finely chopped
  • 1 Large Guajillo Chile -- crumbled
  • 2 Teaspoons Thyme
  • 1/4 Teaspoon Achiote
  • 2 Medium Bay Leaf
  • 1/4 Cup Bread Crumbs -- toasted
  • 2 Cups Potatoes -- sliced
Directions Brown the beef in oil for 5 minutes. Add vinegar, water and salt. Stir well and simmer. Prepare a smooth sauce with the onions, tomatoes, tomatillos, garlic, guajillo chile, thyme and achiote. Add this to the beef with the bay leaves. Continue to simmer over low heat for 1 hour. Add bread crumbs and potatos and simmer for 20 minutes more. Serve with rice and tortillas.
