Ingredients

- 2 Pounds Beef Chuck Roast -- cubed
- 1 Tablespoon Olive Oil
- 1/4 Cup Cider Vinegar
- 4 Cups Water
- 1 Teaspoon Salt
- 1 Small Onion -- sliced
- 2 Large Tomatoes -- sliced
- 5 Medium Tomatillos -- sliced
- 2 Cloves Garlic -- finely chopped
- 1 Large Guajillo Chile -- crumbled
- 2 Teaspoons Thyme
- 1/4 Teaspoon Achiote
- 2 Medium Bay Leaf
- 1/4 Cup Bread Crumbs -- toasted
- 2 Cups Potatoes -- sliced

Directions
|
Brown the beef in oil for 5 minutes. Add vinegar, water and salt. Stir well and simmer. Prepare a smooth sauce with the onions, tomatoes, tomatillos, garlic, guajillo chile, thyme and achiote. Add this to the beef with the bay leaves. Continue to simmer over low heat for 1 hour. Add bread crumbs and potatos and simmer for 20 minutes more. Serve with rice and tortillas.
