Ingredients
  • 2 Tablespoons Olive Oil
  • 2 Pounds Pork -- cubed
  • Salt And Pepper -- to taste
  • 3 Leaves Bay Leaf
  • 1/4 Teaspoon Thyme
  • 2 Medium Jalapeno -- chopped
  • 1 Stick Cinnamon -- 1 inch long
  • 1 Teaspoon Nutmeg
  • 3 Cups Water
  • 1/4 Cup Sour Orange Juice
  • 1 Small Tomato -- sliced
  • 1 Small Onion -- finely chopped
  • 1 Clove Garlic -- sliced
  • 1/2 Cup Bread Crumbs -- toasted
Directions saute pork in oil for 5 minutes. add salt, pepepr, bay leaves, thyme, chiles, cinnamon and nutmeg. stir well, add water and orange juice. bring to a boil, reduce heat and simmer. meanwhile combine tomato, onion and garlic in blender and puree. add to the pork and continue to simmer for 1 hour. add crumbs to thicken broth and simmer for 10 minutes. serve hot.
