Ingredients

- 2 Pounds Beef Chuck Roast -- cubed
- 1 Tablespoon Olive Oil
- 1/2 Teaspoon Thyme
- 3 Medium Bay Leaf
- 1 Large Tomato -- sliced
- 1 Small Onion -- sliced
- 1 Clove Garlic -- finely chopped
- 1 Large Guajillo Chile -- crumbled
- 1 Large Pasilla Chile -- crumbled
- 1 Medium Red Bell Pepper -- finely chopped
- 1 Teaspoon Salt
- 2 Cups Water
- 1/4 Cup Bread Crumbs -- moistened

Directions
|
Fry beef in oil for 5 minutes. Add thyme and bay leaves and fry for 1 minute. Process into a smooth paste the onion, tomato, garlic, chiles, bell pepper, salt and water. Add to the beef and simmer for 1 hour. Add bread and simmer for 10 more minutes. Serve with tortillas.
