Ingredients
  • 2 Pounds Beef Chuck Roast -- cubed
  • 1 Tablespoon Olive Oil
  • 1/2 Teaspoon Thyme
  • 3 Medium Bay Leaf
  • 1 Large Tomato -- sliced
  • 1 Small Onion -- sliced
  • 1 Clove Garlic -- finely chopped
  • 1 Large Guajillo Chile -- crumbled
  • 1 Large Pasilla Chile -- crumbled
  • 1 Medium Red Bell Pepper -- finely chopped
  • 1 Teaspoon Salt
  • 2 Cups Water
  • 1/4 Cup Bread Crumbs -- moistened
Directions Fry beef in oil for 5 minutes. Add thyme and bay leaves and fry for 1 minute. Process into a smooth paste the onion, tomato, garlic, chiles, bell pepper, salt and water. Add to the beef and simmer for 1 hour. Add bread and simmer for 10 more minutes. Serve with tortillas.
