Ingredients
  • 4 Large Onions -- chopped
  • 6 Cloves Garlic -- chopped
  • 2 Large Tomatoes -- chopped
  • 1 Large Pasilla Chile -- chopped
  • 1/2 Teaspoon Achiote
  • 6 Large Peppercorns
  • 1 Small Red Bell Pepper -- chopped
  • 10 Cups Water
  • 10 Pounds Turkey -- in many pieces
  • 2 Teaspoons Salt
  • 1/2 Cup Mint -- finely chopped
  • 1/2 Cup Cilantro -- finely chopped
  • 8 Cloves Garlic -- finely chopped
Directions Put onion, garlic, tomatoes, chile, achiote, peppercorns and bell pepper in a skillet and fry for 10 minutes. Process this to a smooth paste with 1 cup water. Put turkey, remaining water and salt in a large pan and bring to a boil over moderate heat. Add sauce, mint, cilantro and garlic. Simmer for 1 hour. Serve with tortillas.
