Guatamalan   -   Dobladas (Guatemala)   adapted from False Tongues and Sunday Bread by Copeland Marks

  • 1 Cup Farmer Cheese
  • 1 Small Red Bell Pepper -- finely chopped
  • 1 Small Onion -- finely chopped
  • 1/2 Teaspoon Pepper
  • 1/2 Teaspoon Salt
  • 10 Flour Tortillas
  • 1/4 Cup Olive Oil
Directions Mix cheese, pepper, onion, black pepper and salt together. Put 1 heaping tablespoon of the cheese mixture on the lower half of a tortilla and fold over to make a half-moon shape. Press lightly. Heat oil in skillet and fry until crisp on both sides. Drain on paper towels and serve warm.
Serves 10
