Ingredients
|
- 4 Pounds Chicken -- in large pieces
- 8 Cloves Garlic -- finely chopped
- 1 Teaspoon Salt
- 1 Pound Potato -- cubed
- 4 Cups Water
- 3 Large Tomatoes -- chopped
- 2 Medium Tomatillos -- chopped
- 1/2 Teaspoon Thyme
- 1 Small Onion -- sliced
- 1 Medium Bay Leaf
- 1 Tablespoon Olive Oil

Directions
|
Cook chicken, garlic, salt and potatoes in water for 30 mintues. Reserve 2 cups broth. Process into a smooth paste tomato, tomatillos, thyme and onion with the reserved broth. In large saucepan, fry the sauce with the bay leaf in the oil for 3 minutes. Add chicken and potatos and simmer over low heat for 15 minutes. Serve with rice or tortillas.
