Guatamalan   -   Pan De Banana Madura   adapted from False Tongues and Sunday Bread by Copeland Marks

  • 6 Medium Ripe Bananas -- peeled
  • 1 1/2 Cups Coconut Milk
  • 1 Stick Margarine -- room Temp.
  • 2 Cups Flour
  • 1/2 Teaspoon Salt
  • 2 Teaspoons Baking Soda
  • 1 Teaspoon Nutmeg
  • 1/2 Teaspoon Vanilla Extract
  • 2 Tablespoons Raisins -- optional
Directions Process bananas and coconut milk into a smooth paste. Add margarine and combine well. Add flour, salt, baking soda, nutmeg, vanilla and raisins. Mix well. Pour into a 12x16 inch pan and bake for 350 degrees for 30 minutes.
