Ingredients
|
- 1 Pound Potato -- peeled
- 2 Cups Water
- 1/2 Teaspoon Salt
- 1 Small Onion -- finely chopped
- 1 Large Tomato -- finely chopped
- 1/2 Teaspoon Pepper
- 1 Large Chipotle Pepper -- crumbled
- 2 Tablespoons Olive Oil
- 2 Tablespoons Parmesan Cheese -- grated

Directions
|
Cook potatoes in water with salt until soft but still firm. Drain and mash them with a few lumps left. Fry onion, tomato, pepper and chile in oil for 3 minutes. Add potatoes and mix well. Fry for 5 minutes. Serve warm, sprinkled with cheese.
