Guatamalan   -   Papas A La Pastora   adapted from False Tongues and Sunday Bread by Copeland Marks

  • 1 Pound Potato -- peeled
  • 2 Cups Water
  • 1/2 Teaspoon Salt
  • 1 Small Onion -- finely chopped
  • 1 Large Tomato -- finely chopped
  • 1/2 Teaspoon Pepper
  • 1 Large Chipotle Pepper -- crumbled
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Parmesan Cheese -- grated
Directions Cook potatoes in water with salt until soft but still firm. Drain and mash them with a few lumps left. Fry onion, tomato, pepper and chile in oil for 3 minutes. Add potatoes and mix well. Fry for 5 minutes. Serve warm, sprinkled with cheese.
