Hungarian - Bableves (Bean Soup)

Ingredients
|
- 1 1/2 Cups Cooked Beans -- Any Kind
- 1 Medium Carrot -- Chopped
- 1 Medium Parsley Root -- Chopped
- 1 Small Onion -- Chopped
- Salt And Pepper -- To Taste
- 2 Tablespoons Olive Oil
- 3 Tablespoons Flour
- 1 Clove Garlic -- Chopped
- 1 Teaspoon Paprika
- 2 Tablespoons Vinegar
- 7 Ounces Smoked Sausage -- Sliced
- 1/2 Cup Sour Cream
- 6 Cups Chicken Stock

Directions
|
Saute onion, parsley root and carrot in oil until browned. Add flour and let darken to a golden brown. Add Garlic and paprika. Saute for 1 minute. Add beans, stock, vinegar and sausage. Simmer for 10 minutes. Remove from heat and stir in sour cream. Serve.
