Hungarian   -   Csusztatott Palacsinta (Chocolate Pancakes)   adapted from Culinaria Hungary

  • 3 Medium Eggs -- Separated
  • 2/3 Cup Confectioner's Sugar
  • 1 Teaspoon Vanilla
  • 2 Tablespoons Butter
  • 1/2 Cup Milk
  • 1/2 Cup Cream
  • 1 1/3 Cups Flour
  • 2 Tablespoons Butter
  • 1/2 Cup Chocolate -- Grated
Directions Beat egg yolks with 2 tablespoons of sugar, vanilla and butter. Add milk and cream. Stir well. Add flour and stir to smooth batter. Beat egg whites with remaining sugar until stiff. Fold into the batter. Butter a round ovenproof dish and a skillet about the same size. Cook a pancake about 1/4 inch thick on one side only. Remove to ovenproof dish. Sprinkle with some of the chocolate. Repeat until the last pancake. Cook on both sides and place on top of the stack. Bake in 300 degree oven until the chocolate melts. Slice like a cake and serve.
