Hungarian   -   Dobos Torta (Dobos Cake)   adapted from The Balkan Cookbook by Inge Kramarz

  • 6 Large Eggs -- Separate Out Yolks
  • 3/4 Cup Confectioner's Sugar
  • 3/4 Cup Flour
  • 6 Large Eggs
  • 1 Cup Confectioner's Sugar
  • 1 Teaspoon Vanilla
  • 2 Ounces Bitter Chocolate
  • 1 Cup Butter
  • 2 Tablespoons Sugar
  • 1 Tablespoon Water
Directions Beat yolks with confectioners sugar, then add flour. Beat egg whites until stiff and fold into the yolk mixture. From this dough bake 6 thin layers in a 350 degree oven for 15 minutes per layer. Beat eggs with sugar, vanilla and chocolate in a double boiler over hot water. Cool to lukewarm. Cream the butter and stir into the chocolate mixture. Spread a thin layer of chocolater over each layer of cake, placing them on top of each other. Reserve enough chocolate to cover the sides. Boil the sugar and water together until a thin brown caramel forms. Drizzle carmamel over the cake and serve.
