Hungarian   -   Korhelyleves (Night Owl Soup)   adapted from Culinaria Hungary

  • 10 Ounces Ham -- Cubed
  • 10 Ounces Sauerkraut -- Drained
  • 2 Tablespoons Butter
  • 1 Large Onion -- Chopped
  • 2 Teaspoons Paprika
  • 4 Cups Chicken Broth
  • Salt And Pepper -- To Taste
  • 3 Tablespoons Flour
  • 1/4 Cup Sour Cream
  • 6 Ounces Spicy Sausage -- Sliced
Directions Saute onion in butter until browned. Add paprika and sauerkraut, saute for 3 minutes. Add ham, stock, salt and pepper. Bring to a boil. Mix flour with sour cream. Add sausage, simmer for 10 minutes. Add sour cream mixture. Allow to thicken and serve.
