Ingredients
  • 8 Ounces Smoked Pork -- Cubed
  • 14 Ounces Lentils
  • 1 Medium Onion -- Chopped
  • 1 Teaspoon Tarragon -- Chopped
  • Salt And Pepper -- To Taste
  • 1 Pinch Caraway Seed
  • 1 Medium Bell Pepper -- Chopped
  • 1 Medium Tomato -- Chopped
  • 3 Tablespoons Olive Oil
  • 2 Tablespoons Flour
  • 3 Teaspoons Sugar
  • 2 Cloves Garlic -- Chopped
  • 1 Bunch Parsley -- Chopped
  • 2 Stalks Celery -- Chopped
  • 1 Teaspoon Paprika
  • 1/2 Cup Red Wine
  • 1 Tablespoon Mustard Powder
  • 1 Tablespoon Tarragon Vinegar
  • 1/2 Cup Sour Cream
  • 8 Cups Beef Stock
Directions Place pork, onions, tarragon, salt, pepper, caraway, bell pepper and tomato in a stock pot. Add stock. Bring to a simmer for 30 minutes. Add lentils, simmer for 30 minutes. Saute flour in oil until browned, add sugar, garlic, parsley, celery and paprika. Saute for 3 minutes. Add to soup, along with wine and mustard powder. Bring to a boil. Add vinegar. Boil 1 minute. Remove from heat, stir in sour cream and serve.
