Hungarian - Paprikas Krumpli (Paprika Potatoes)

Ingredients
|
- 4 Pounds Potato -- Quartered
- 2 Medium Bell Pepper -- Chopped
- 2 Large Tomatoes -- Chopped
- 6 Ounces Bacon -- Chopped
- 1 Large Onion -- Chopped
- 2 Cloves Garlic -- Chopped
- 1 Pinch Ground Caraway
- 1 Tablespoon Paprika
- Salt And Pepper -- To Taste

Directions

Saute bacon until the oil renders. Saute onion with the bacon until browned. Add garlic and caraway. Simmer for 1 minute. Add remaining ingredients and enough water to just cover the potatoes. Simmer for 20 minutes. Let most of the water evaporate. Serve.
