Hungarian   -   Paprikas Krumpli (Paprika Potatoes)   adapted from Culinaria Hungary

  • 4 Pounds Potato -- Quartered
  • 2 Medium Bell Pepper -- Chopped
  • 2 Large Tomatoes -- Chopped
  • 6 Ounces Bacon -- Chopped
  • 1 Large Onion -- Chopped
  • 2 Cloves Garlic -- Chopped
  • 1 Pinch Ground Caraway
  • 1 Tablespoon Paprika
  • Salt And Pepper -- To Taste
Directions Saute bacon until the oil renders. Saute onion with the bacon until browned. Add garlic and caraway. Simmer for 1 minute. Add remaining ingredients and enough water to just cover the potatoes. Simmer for 20 minutes. Let most of the water evaporate. Serve.
