Hungarian   -   Rice With Green Beans (Hungary)   adapted from central european cooking

  • 3 Tablespoons Olive Oil
  • 1 Medium Onion -- chopped
  • 1 Clove Garlic -- chopped
  • 2 Tablespoons Tomato Paste
  • 2 Cups Beef Broth
  • 1 Cup Rice
  • 1/2 Pound Green Beans -- cut in 1-inch pieces
  • Salt And Pepper -- to taste
  • 1/2 Teaspoon Marjoram
  • 2 Tablespoons Parmesan Cheese
Directions saute onion and garlic in olive oil until onion is browning. add tomato paste and beef broth. boil, add rice, reduce heat, cover simmer 10 minutes. add beans, salt, pepper and marjoram. cover cook for 25 minutes or until rice is done. add parmesan cheese and serve.
