Hungarian   -   Sargaborso Leves (Yellow Pea Soup)   adapted from Culinaria Hungary

  • 1 Large Onion -- Chopped
  • 1 1/2 Cups Yellow Split Peas
  • Salt And Pepper -- To Taste
  • 2 Tablespoons Olive Oil
  • 3 Tablespoons Flour
  • 1 Clove Garlic -- Chopped
  • 1/2 Teaspoon Paprika
  • 1 Quart Chicken Stock
Directions Boil onion and peas in stock for 20 minutes. Season with salt and pepper. Saute flour in oil until browned. Add garlic and paprika, saute for 1 minute. Add to soup. Simmer for 5 minutes or until peas are tender.
Serves 4
