Filipino   -   Chicken And Ginger   adapted from The Philippine Cookbook by Reynaldo Alejandro

  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Garlic -- finely chopped
  • 1 Small Onion -- finely chopped
  • 1 Inch Ginger Root -- finely chopped
  • 3 Pounds Chicken -- cubed
  • Salt And Pepper -- to taste
  • 3 Cups Water
  • 1 Large Zucchini Or Green Papaya -- cubed
  • 2 Cups Spinach Leaves
Directions In a large saucpan, sauce garlic, onion and ginger in oil until onion is tender. Add chicken and simmer for 5 minutes. Season with salt and pepper. Add water, cover and simmer for 10 minutes. Uncover pot and add zucchini or papaya. Cook for 10 minutes. Turn off heat and add spinach. Serve.
