Filipino - Chicken Apritada-Style

Ingredients
|
- 3 Pounds Chicken -- cubed
- 1 Clove Garlic -- finely chopped
- 1 Small Onion -- finely chopped
- 6 Ounces Tomato Sauce
- 1 Medium Bay Leaf
- 2 Teaspoons Pepper
- 2 Teaspoons Salt
- 1/4 Cup Water
- 2 Medium Potatoes -- cubed
- 4 Ounces Pimientos

Directions

Simmer chicken, garlic, onion, tomato sauce, bay leaf, pepper, salt and water for 15 minutes. Add potatoes and pimentos. Simmer for 15 more minutes and serve.
