Filipino   -   Chicken Apritada-Style   adapted from The Philippine Cookbook by Reynaldo Alejandro

Ingredients
  • 3 Pounds Chicken -- cubed
  • 1 Clove Garlic -- finely chopped
  • 1 Small Onion -- finely chopped
  • 6 Ounces Tomato Sauce
  • 1 Medium Bay Leaf
  • 2 Teaspoons Pepper
  • 2 Teaspoons Salt
  • 1/4 Cup Water
  • 2 Medium Potatoes -- cubed
  • 4 Ounces Pimientos
Directions Simmer chicken, garlic, onion, tomato sauce, bay leaf, pepper, salt and water for 15 minutes. Add potatoes and pimentos. Simmer for 15 more minutes and serve.
