Filipino   -   Filipino Pansit   adapted from Our Immigrant Ancestors

Ingredients
  • 8 Ounces Pansit
  • 1/4 Cup Peanut Oil
  • 2 Cloves Garlic -- finely chopped
  • 1/2 Pound Pork -- julienned
  • 3 Medium Lopchong -- sliced
  • 1 Large Yellow Onion -- chopped
  • 1 Cup Napa Cabbage -- chopped
  • 2 Tablespoons Soy Sauce
  • 1 1/2 Cups Chicken Stock
  • 2 Tablespoons Fish Sauce
  • 1 Large Leek -- chopped
  • 1 Tablespoon Annatto Oil -- (optional)
  • Fresh Cilantro -- garnish
Directions Soak rice noodles in tepid water about 10 minutes.
Meanwhile, place 2 tabs peanut oil in hot wok. Add garlic and pork. Saute until pork is done, add sausage, onion and cabbage. Stir fry 3 minutes. Add all but noodles & cilantro, stir fry 5 minutes. Add noodles, stir fry until noodles are tender NOT soggy. Place in large bowl and garnish.
