Filipino   -   Lemon Pork   adapted from The Philippine Cookbook by Reynaldo Alejandro

  • 2 Cloves Garlic -- finely chopped
  • 1 Tablespoon Olive Oil
  • 1 Large Onion -- finely chopped
  • 6 Medium Tomatoes -- finely chopped
  • 2 Lemons Lemon Juice
  • 2 Pounds Pork -- cubed
  • 6 Cups Water
  • 3 Medium Yams -- peeled and quartered
  • 1 Pound Spinach
  • 3 Medium Italian Peppers -- chopped
  • 1 Tablespoon Salt
Directions Saute garlic in oil until brown. Add onion, tomatoes, and lemon juice. Add pork and cook until brown. Add water. Bring to a boil and simmer until pork is tender. Add yams and simmer until fork-tender. Add spinach, peppers and salt. Cook for another 7 minutes and serve.
Serves 4
