Filipino   -   Piquant Chicken Stew   adapted from The Philippine Cookbook by Reynaldo Alejandro

  • 3 Tablespoons Olive Oil
  • 2 Tablespoons Garlic -- finely chopped
  • 1 Small Onion -- finely chopped
  • 1 Large Tomato -- finely chopped
  • 3 Pounds Chicken -- cubed
  • 1 Teaspoon Cayenne
  • Salt And Pepper -- to taste
  • 2 Medium Bay Leaf
  • 1/4 Cup Vinegar
  • 1 Tablespoon Paprika
  • 1 Cup Water
Directions Saute garlic and onion in large pan until light brown. Add tomatoes, simmer for 5 minutes. Add chicken, cayenne, pepper, salt, bay leaves, vinegar, paprika and water. Lower heat and simmer for 20 minutes. Serve.
