Filipino - Pork Stew

Ingredients

- 3 Tablespoons Olive Oil
- 4 Medium Potatoes -- peeled and quartered
- 2 Tablespoons Garlic -- finely chopped
- 1 Small Onion -- finely chopped
- 2 Pounds Pork Loin -- cubed
- Salt And Pepper -- to taste
- 1 Cup Tomato Sauce
- 2 Medium Bay Leaf
- 1/2 Teaspoon Oregano
- 1/2 Cup Pimiento Stuffed Olives
- 1/2 Cup Water
- 6 Tablespoons White Vinegar
- 1/4 Cup Bread Crumbs
- 1 Medium Red Pepper -- chopped
- 1 Cup Peas

Directions
|
In large skillet, heat 2 tablespoons of oil and fry potatoes until done. Set aside. In large pan, saute garlic and onion in remaining oil until light brown. Add pork, salt and pepper. Cook, stirring often until pork is browned on all sides. Stir in tomato sauce, bay leaves, oregano, olives, water and vinegar. Simmer for 5 minutes. Add bread crumbs, pepper and peas. Simmer for 10 minutes and serve.
