Filipino - Shrimp And Corn (Mais Guisado)

Ingredients
|
- 2 Tablespoons Olive Oil
- 1 Tablespoon Garlic -- finely chopped
- 1 Small Onion -- finely chopped
- 1/2 Pound Shrimp -- chopped
- 1/2 Cup Chicken Broth
- Salt And Pepper -- to taste
- 3 Cups Corn -- frozen
- 1/2 Pound Spinach

Directions
|
Heat oil in medium pot. Saute garlic and onion until onion is transparent. Add shrimp and chicken broth. Season with salt and pepper. Bring to a boil. Add corn and simmer until corn is tender. Add spinach and simmer for 3 minutes. Serve over rice.
