Ingredients
  • 2 Tablespoons Olive Oil
  • 1 Large Onion -- thinly sliced
  • 2 Cloves Garlic -- thinly sliced
  • 1 Teaspoon Ginger -- finely chopped
  • 1/4 Teaspoon Crushed Red Pepper
  • 1 Teaspoon Turmeric
  • 1 1/2 Cups Water
  • 3 Pounds Chicken -- cut into 6 pieces
  • 2 Whole Cloves
  • 1/4 Teaspoon Cinnamon
  • 1/4 Teaspoon Pepper
  • 1 Teaspoon Salt
  • 4 Pods Cardamom -- ground
  • 1/2 Pound Small Mushrooms -- any kind
  • 1 Large Tomato -- finely chopped
Directions Heat oil in pan, fry onions, garlic and ginger for 5 minutes. Add red pepper and turmeric. Fry 1 minute. Add 1 tablespoon of water. Fry rapidly for 1 minute and add chicken. Brown chicken well for 5 minutes. Add 1/4 cup of water, cloves, cinnamon, pepper, salt and cardamom. Stir well. Add mushrooms and tomato. Fry for 1 minute then add the rest of the water. Cover the pan and cook for 30 minutes to reduce liquid and produce a thick sauce. Serve with rice.
