India   -   Chicken Moghlai With Cilantro Relish   adapted from Classic Indian Cuisine

Ingredients
  • 4 Tablespoons Olive Oil
  • 4 Chicken Breast Halves
  • 1 Teaspoon Cardamom
  • 1/2 Teaspoon Cinnamon
  • 1 Bay Leaf
  • 1/4 Teaspoon Ground Cloves
  • 2 Large Onions -- chopped
  • 1 Inch Ginger Root -- chopped
  • 4 Cloves Garlic
  • 2 Teaspoons Cumin
  • 1/4 Teaspoon Cayenne
  • 1 1/4 Cups Broth -- or water
  • 1/3 Cup Yogurt
  • Cilantro Relish
Directions Brown chicken on all sides, add cardamom, cinnamon, bay leaf, and cloves. Saute 30 seconds. Add onions, saute until soft. add ginger, garlic, cumin & cayenne, saute 3 minutes. Add broth cover & simmer 30 minutes. Just before serving, stir in yogurt. Serve with cilantro relish.
