India   -   Chicken Tikka   adapted from Classic Indian Cuisine

Ingredients
  • 1 Pound Chicken Breast -- diced
  • 1 Teaspoon Salt
  • 1/2 Lemon Lemon Juice
  • 1/2 Teaspoon Red Food Coloring
  • 1 Tablespoon Tomato Paste
  • 2 Cloves Garlic
  • 1/2 Inch Ginger Root -- minced
  • 2 Teaspoons Coriander
  • 1/2 Teaspoon Garam Masala
  • 1/2 Teaspoon Nutmeg
  • 1/2 Teaspoon Turmeric
  • 2/3 Cup Plain Yogurt
  • 1/4 Cup Olive Oil
  • 1/2 Teaspoon Chili Powder
Directions Marinate chicken in salt & lemon juice for 30 minutes. Place remaining ingredients in belnder & mix until smooth. Coat chicken, marinate in this marinade overnight. Put on skewers, place in roasting pan, brush with some of remaining marinade. Cook 8 minutes at 450*. Rotate, coat with marinade, cook another 8 minutes.
