India   -   Chicken With Channa Dahl   adapted from Classic Indian Cooking

  • 1 Cup Yellow Split Peas
  • 6 Chicken Breast Halves
  • 1 Tablespoon Coriander
  • 1 Teaspoon Turmeric
  • 1/2 Teaspoon Cayenne
  • 1/2 Teaspoon Black Pepper
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Nutmeg
  • 4 Tablespoons Water
  • 2 Tablespoons Olive Oil
  • 1/2 Inch Ginger Root
  • 4 Cloves Garlic
  • 1 Jalepeno -- chopped
  • 1 Teaspoon Salt
  • 2 Cups Water
  • 3 Tablespoons Butter
  • 1 Large Onion -- chopped
  • 2 Teaspoons Cilantro
  • 1 Tomato -- chopped
Directions Soak split peas for 2 hours. In small bowl, blend coriander, turmeric, cayenne, black pepper, cinnamon, nutmeg, & 4 tablespoons of water. Saute ginger, garlic & jalepeno for 1 minute. Add the spice paste, cook for 3 minutes. Add chicken, cook 4 minutes. Add split peas, cook 4 minutes. Sit in salt, water & boil cover simmer 40 minutes. In separate pan, saute onion in butter until golden brown. Add to chicken along with cilantro & tomatoes after the 40 minutes of cooking. Cover and simmer 10 minutes.
