India   -   Coriander Chicken   adapted from Classic Indian Cuisine

Ingredients
  • 6 Chicken Breast Halves
  • 4 Cloves Garlic
  • 2/3 Cup Yogurt
  • 5 Tablespoons Olive Oil
  • 1 Large Onion -- chopped
  • 2 Tablespoons Coriander
  • 1/2 Teaspoon Black Pepper
  • 1 Teaspoon Garam Masala
  • 1/2 Teaspoon Turmeric
  • 1/2 Cup Warm Water
  • 1 Teaspoon Salt
  • 2 Hard-Boiled Egg -- sliced (GARNISH)
  • 1/2 Teaspoon Paprika -- (garnish)
  • 1/4 Cup Fresh Cilantro -- (garnish)
Directions Marinate the chicken in garlic & yogurt, 2 hours or longer. Saute onions until golden brown, add coriander, pepper, garam masala and turmeric, saute 15 seconds. Add chicken & all marinade. Fry until it starts to change color. Add all but garnishes. Bring to boil. Reduce heat, simmer 30 minutes. Garnish & serve
