India   -   Garden Biryani   adapted from 500 low fat fruit & vegetable recipes - Sarah Schlesinger

Ingredients
  • 4 Tablespoons Olive Oil
  • 1 Large Onion -- chopped
  • 1 Clove Garlic -- chopped
  • 1 Small Bell Pepper -- chopped
  • 2 Cups Rice -- raw
  • 1 Teaspoon Ginger Root -- minced
  • 1/4 Teaspoon Ground Cloves
  • 1/4 Teaspoon Cinnamon
  • 1/2 Teaspoon Cumin
  • 4 Cups Boiling Water
  • 1 Cup Green Beans
  • 2 Medium Carrots -- julienned
  • 3/4 Cup Broccoli Flowerets
  • 3/4 Cup Cauliflower Flowerets
  • 2 Medium Potatoes -- diced
  • 1/2 Cup Peas
  • 1/2 Cup Unsalted Peanuts -- or cashews
Directions saute onion, garlic and pepper in oil for 4 minutes. add rice and stir until coated in oil. add seasonings. stir over medium heat for 2 minutes. Add boiling water. As soon as water returns to a boil, add remaining vegetables. Cover and gently simmer for 45 minutes or until rice is tender. Immediatly before serving, saute nuts in oil until toasted and sprinkle over biryani.
