India   -   Ground Beef Cutlets Parsi Style   adapted from Indian Light Cooking by Ruth Law

  • 3 Slices White Bread -- cubed
  • 1 Tablespoon Ginger -- finely chopped
  • 1 Tablespoon Garlic -- finely chopped
  • 1 Medium Onion -- finely chopped
  • 1/4 Cup Mint -- finely chopped
  • 1/2 Cup Cilantro -- finely chopped
  • 1/2 Teaspoon Turmeric
  • 1 Teaspoon Cayenne
  • 1 Teaspoon Coriander -- ground
  • Salt -- to taste
  • 1 Pound Lean Ground Beef
  • 1 1/2 Cups Dry Bread Crumbs
  • 3 Medium Egg Whites
  • 1 Tablespoon Olive Oil
Directions Soak bread in water for 5 minutes. Squeeze dry. In food processor, process ginger, garlic and 1 teaspoon water to a paste. In a bowl, combine onion, mint, cilantro, turmeric, cayenne, coriander, ginger paste and salt. Mix thoroughly. Add beef and soaked bread. Mix well. Divide into 8 portions and form 1/2 inch thick patties. Spread breadcrumbs on a tray. Dredge patties in breadcrumbs then into egg whites. Heat oil in skillet. Add cutlets to pan and cook for 4 minutes per side.
