India   -   Hare Tamatar Wali Murghi (Chicken With Green Tomatoes)   adapted from From Bengal to Punjab by Smita Chandra

  • 2 Pounds Chicken -- In 8 Pieces
  • 1 Medium Onion -- Chopped
  • 1 Teaspoon Ginger
  • 3 Tablespoons Olive Oil
  • 1/2 Teaspoon Cumin Seed
  • 1/2 Teaspoon Black Mustard Seeds
  • 3 Medium Green Tomato -- Chopped
  • 5 Tablespoons Sour Cream
  • Salt And Pepper -- To Taste
  • 1/4 Teaspoon Cayenne
  • 1/4 Teaspoon Turmeric
  • 1/2 Teaspoon Fennel Seed -- Ground
  • 1/2 Teaspoon Coriander Seed -- Ground
  • 1/2 Teaspoon Garam Masala
Directions Saute cumin and mustard seeds for 30 seconds. Add ginger and onion, saute for 12 minutes. Puree tomatoes in blender. Mix in sour cream and mix well. Add salt, cayenne, fennel, turmeric and coriander to the onion mixture. Cook for 1 minute. Add tomato mixture, simmer for 2 minutes. Add chicken and simmer for 40 minutes. Mix in garam masala and serve over rice.
