India   -   Hot And Sour Squash (Khuta Meetha Lal Khadoo)   adapted from The Varied Kitchens of India by Copeland Marks

  • 2 Tablespoons Olive Oil
  • 1 Small Onion -- thinly sliced
  • 1 Teaspoon Ginger -- finely chopped
  • 1 Clove Garlic -- finely chopped
  • 1/2 Teaspoon Crushed Red Pepper
  • 1/4 Teaspoon Turmeric
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Sugar
  • 1 Pound Butternut Squash -- cubed
  • 1/4 Cup Water
  • 1 Tablespoon Tamarind Paste -- dissolved in
  • 1/2 Cup Water
Directions Heat oil in pan and fry onion for 2 minutes. Add ginger, garlic, red pepper, tumeric, salt and sugar. Fry 1 minute. Add squash and fry for 1 minute. Add water, cover and cook until squash is tender about 15 minutes. Add tamarind liquid and fry until liquid has evaporated. Serve with rice.
