India   -   Hot Lemon Cashew Rice   adapted from The Whole Chile Cookbook

  • 5 Small Yellow Wax Hot Chiles -- sliced
  • 2 Cups Basmati Rice -- cooked
  • 3 Tablespoons Lemon Juice
  • 1/2 Teaspoon Mustard Seeds
  • 1 Tablespoon Fresh Ginger Root -- finely chopped
  • 2 Tablespoons Olive Oil
  • 1/2 Cup Cashews -- chopped
  • 2 Tablespoons Cilantro -- chopped
Directions toss rice with lemon juice. let sit 10 minutes. fry mustard seeds and ginger in oil until the seeds start to darken. add chiles, cashews and rice. stir and toss until heated. garnish with cilantro and serve. for creamier version stir in some plain yogurt.
