India   -   Indian Pea And Potato Wraps   adapted from veggie life

  • 1 Tablespoon Canola Oil
  • 1 Tablespoon Black Mustard Seeds
  • 1 Teaspoon Cumin -- ground
  • 1/2 Teaspoon Turmeric
  • 1 Large Onion -- thinly sliced
  • 1 Medium Jalapeno -- minced
  • 12 Ounces Tiny Red Potatoes -- quartered
  • 1 Teaspoon Salt
  • 1 Cup Water
  • 1 Lime Lime Juice
  • 1 Cup Frozen Peas
  • 1/2 Cup Cilantro -- chopped
  • 1 Package Tortillas
  • 3 Cups Cheddar Cheese -- shredded
  • Nonfat Sour Cream -- optional
Directions In medium pot or skillet, add oil, mustard seed, cumin and turmeric. Stirring constantly. when seeds start to pop, add onion and jalapeno. Saute. Add potatoes, salt and water. simmer covered 10 minutes or until potatoes are tender. add water as necessary. add lime juice to deglaze pan. stir in peas and cilantro. heat through. spoon into warm tortillas and rice. Add sour cream if desired.
