India   -   Indian Rice Salad   adapted from super foods cookbook

Ingredients
  • 1 Medium Onion -- finely chopped
  • 1 Medium Bay Leaf
  • 1 Teaspoon Olive Oil
  • 1 Large Carrot -- julienned
  • 2 Cups Basmati Rice -- cooked
  • 2 Cups Swiss Chard -- shredded
  • 2 Tablespoons Raisins
  • 3 Medium Scallion -- julienned
  • 1/4 Cup Lemon Juice
  • 1/4 Teaspoon Nutmeg
  • 1 Tablespoon Parmesan Cheese -- grated
Directions saute onion and bay leaf in oil for 5 minutes. add carrots, 5 more minutes. Stir in remaining ingredients except cheese. cook until chard wilts about 2 minutes. remove bay leaf and allow to cool to room temperature. top with cheese.
Serves 4
