India   -   Indian Spiced Lentils   adapted from unknown

  • 1 Medium Onion -- chopped
  • 1 Clove Garlic -- chopped
  • 2 Tablespoons Margarine
  • 6 Ounces Dried Red Lentils
  • 2 Tablespoons Coriander
  • 2 Teaspoons Ginger Root
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Turmeric
  • 1/4 Teaspoon Ground Red Pepper
  • 2 1/2 Cups Water
  • 1 Tablespoon Vegetable Oil
Directions Saute onion and garlic in the margarine. Stir in remaining ingredients except the water and oil. Cook and stir over medium heat 2 minutes, add water & oil. Heat to boling, reduce heat, cover and simmer until lentils are tender and most of the liquid is absorbed, about 30 minutes..
