India - Indian Style Lentils

Ingredients

- 1 Pound Lentils
- 6 Cups Chicken Stock
- 1/2 Teaspoon Turmeric
- 1/4 Teaspoon Coriander
- 1/8 Teaspoon Pure Chile Powder
- 1/8 Teaspoon Cumin
- 1/8 Teaspoon Cayenne
- 1 Pinch Ground Cloves
- 3/4 Teaspoon Salt
- 4 Medium Potatoes -- diced
- 3 Tablespoons Lime Juice
- 12 Flour Tortilla -- warmed
- 2 Cups Tomatoes -- chopped
- 1 1/2 Cups Fresh Mint -- shredded
- 2 Cups Sour Cream
- Pickled Carrots

Directions
|
Place lentils, stock and spices in a large pot. Bring to boil. Add potatoes, simmer for 20 minutes. Remove from heat and stir in lime juice. To assemble, place 1/2 cup lentil mixture in the center or a tortilla, top with remaining ingredients and serve.
