India   -   Indian Style Lentils   adapted from The Well Filled Tortilla Cookbook by Wise and Hoffman

Ingredients
  • 1 Pound Lentils
  • 6 Cups Chicken Stock
  • 1/2 Teaspoon Turmeric
  • 1/4 Teaspoon Coriander
  • 1/8 Teaspoon Pure Chile Powder
  • 1/8 Teaspoon Cumin
  • 1/8 Teaspoon Cayenne
  • 1 Pinch Ground Cloves
  • 3/4 Teaspoon Salt
  • 4 Medium Potatoes -- diced
  • 3 Tablespoons Lime Juice
  • 12 Flour Tortilla -- warmed
  • 2 Cups Tomatoes -- chopped
  • 1 1/2 Cups Fresh Mint -- shredded
  • 2 Cups Sour Cream
  • Pickled Carrots
Directions Place lentils, stock and spices in a large pot. Bring to boil. Add potatoes, simmer for 20 minutes. Remove from heat and stir in lime juice. To assemble, place 1/2 cup lentil mixture in the center or a tortilla, top with remaining ingredients and serve.
Serves 4
