India   -   Martsawangan Korma (Mutton In Chili Sauce)   adapted from The Best of Kashmiri Cooking by Neerja Mattoo

  • 8 Large Red Jalapenos -- Chopped
  • 3 Tablespoons Olive Oil -- Or Ghee
  • 2 Large Onion -- Chopped
  • 1/2 Teaspoon Cloves
  • 2 Pounds Mutton -- Cubed
  • 1 Teaspoon Salt
  • 2 Teaspoons Ginger
  • 1/2 Teaspoon Cardamom
  • 1 Stick Cinnamon
  • 3 Medium Bay Leaves
  • 2 Teaspoons Garam Masala
  • 2 Cups beef broth
Directions Saute onions and jalapenos in oil until well browned. Add cloves, mutton and salt. Saute until the meat is well browned. Add stock, ginger, cardamom, cinnamon and bay leaves. Simmer for 20 minutes. Sprinkle with garam masala and serve over rice.
