India   -   Mung Bean And Potato Curry   adapted from Versatile Grain and Elegant Bean

Ingredients
  • 3 Tablespoons Butter
  • 1 Medium Onion -- Chopped
  • 1 Tablespoon Ginger
  • 1 Teaspoon Coriander
  • 1 Teaspoon Turmeric
  • 1 Teaspoon Cumin
  • 1/4 Teaspoon Mace
  • Salt And Pepper -- To Taste
  • 1 Large Italian Pepper -- Chopped
  • 1 Can Tomatoes -- Chopped
  • 1 Cup Plain Yogurt
  • 12 Small New Potatoes -- Cooked
  • 2 Cups Mung Beans -- Cooked
  • 1 Tablespoon Cilantro -- Chopped
Directions Saute onion and ginger in butter for 5 minutes. Add coriander, turmeric, cumin, mace, salt, pepper and chile. Simmer for 1 minute. Add tomatoes and bring to a boil. Reduce heat to very low and stir in yogurt. Simmer for 5 minutes. Add potatoes and mung beans. Simmer for 10 minutes. Serve over rice, sprinkle with cilantro.
