Ingredients

- 1 Cup Mung Beans -- rinsed and drained
- 2 Tablespoons Peanut Oil
- 1 Teaspoon Cumin Seeds
- 1 Teaspoon Ginger -- freshly grated
- 2 Medium Green Chiles -- seeded and chopped
- 1/2 Lemon Lemon Juice
- 4 Tablespoons Cilantro -- minced
- Salt And Pepper -- to taste

Directions

cook mung beans in 3 1/2 cups of water until soft about 1 hour. saute remaining ingredients 5 to 7 minutes. add to beans and cook 10 minutes. serve as a side dish with fresh cooked soft indian breads.
