India   -   Murgh Khatai (Chicken With Tamarind)   adapted from From Bengal to Punjab by Smita Chandra

  • 2 Pounds Chicken -- In 8 Pieces
  • 2 Teaspoons Tamarind Paste
  • 2 Tablespoons Water
  • 1/2 Teaspoon Sugar
  • Salt And Pepper -- To Taste
  • 1/4 Teaspoon Cayenne
  • 1 Teaspoon Ginger
  • 1 Teaspoon Coriander
  • 3 Tablespoons Olive Oil
Directions Make deep gashes into the chicken. Dissolve tamarind in water and all the remaining ingredients except oil. Rub the mixture over the chicken and marinate for 1 hour. Baste the chicken in the oil and grill or broil until done. Serve with rice.
