India   -   Mustard Seed Fish Fillets   adapted from Sun-Drenched Cuisine by Marlena Spieler

  • 2 Medium Jalapeno -- vine
  • 1 Medium Onion -- finely chopped
  • 6 Cloves Garlic -- finely chopped
  • 1 Teaspoon Turmeric
  • 2 Tablespoons Mustard Oil
  • 2 Pounds Red Snapper
  • 3 Tablespoons Yellow Mustard Seeds
  • 1 Lemon Lemon Juice
  • Salt And Pepper -- to taste
Directions Combine jalapeno, onion, garlic and turmeric with 1 tablespoon of mustard oil. Mix with fish and let stand for 15 minutes. Heat mustard seeds in remaining oil until they begin to pop. Add fish, reduce heat and cook over low heat for 4 minutes per side. Squeeze on lemon juice, season with salt and pepper and serve.
