India   -   Potato Raita   adapted from Classic Indian Cuisine

  • 2 Tablespoons Olive Oil
  • 1/2 Teaspoon Fennel Seed
  • 1 Clove Garlic
  • 2 Medium Potatoes -- peeled & diced
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Salt
  • 2/3 Cup Plain Yogurt
  • 1/2 Teaspoon Sugar
  • 1/2 Teaspoon Chili Powder
Directions Saute the fennel seed & garlic for 2 minutes. Add potatoes, cook until potatoes are soft & brown. Stir in cumin & salt. Remove from heat. Beat yogurt & sugar until smooth. Pour over potatoes and sprinkle with chili powder or paprika before serving.
