India   -   Sausage Curry   adapted from The Varied Kitchens of India by Copeland Marks

Ingredients
  • 1 Pound Hot Italian Sausage -- sliced
  • 1 Cup Water
  • 2 Tablespoons Olive Oil
  • 1 Small Onion -- sliced
  • 1 Teaspoon Ginger -- finely chopped
  • 1 Clove Garlic -- finely chopped
  • 1/2 Teaspoon Crushed Red Pepper
  • 1 Tablespoon Cumin
  • 1/4 Teaspoon Turmeric
  • 1/2 Teaspoon Salt
  • 3 Small Potatoes -- halved
  • 1 Large Tomato -- finely chopped
  • 2 Tablespoons Cilantro -- finely chopped
Directions Add oil and brown sausage and onion for 2 minutes. Add ginger, garlic, red pepper, turmeric and salt. Stir fry for 2 minutes. Add potatoes, mix well, add water, cover and cook for 10 minutes. Add tomatoes, cover and cook for 10 more minutes. Add coriander and stir. Serve with rice.
