India   -   Savory Lentils (Dal)   adapted from Betty Crockers New International Cookbook

  • 1 Cup Dried Lentils
  • 3 Cups Water
  • 1 Teaspoon Salt
  • 1 Teaspoon Turmeric
  • 1 Tablespoon Olive Oil
  • 1 Medium Onion -- chopped
  • 5 Cloves Garlic
  • 1 Teaspoon Cumin
  • 1/4 Teaspoon Cardamom
  • 2 Tablespoons Olive Oil
  • 4 Cups Rice -- cooked
Directions heat lentils and water to boiling in 2-quart saucepan, Stir in salt and turmeric. Cover and simmer about 40 minutes or until lentils are tender.
Saute onion , garlic, cumin and cardamon in oil, until onion is tender. Stir onion mixture into lentils. cook uncover 20-30 min until you get the consistency of refried beans. Serve over rice
