India   -   Spiced Chicken Soup (Marag)   adapted from Sephardic Cooking by Copeland Marks

Ingredients
  • 1 Medium Onion -- finely chopped
  • 1/4 Teaspoon Ginger -- finely chopped
  • 1 Clove Garlic -- finely chopped
  • 1/2 Teaspoon Turmeric
  • 1 Teaspoon Salt
  • 4 Cups Water
  • 3 Pounds Chicken -- cubed
  • 1 Medium Tomato -- finely chopped
  • 1 Cup Broccoli -- chopped
  • 1/2 Cup Green Peas
  • 1 Medium Carrot -- thinly sliced
  • 1 Medium Potato -- cubed
  • 2 Tablespoons Cilantro -- finely chopped
Directions Cook onion, ginger, garlic, turmeric, salt, water and chicken in large pan over medium heat for 25 minutes. Add tomato, broccoli, peas, carrots and potatoes. Simmer for 20 more minutes. Sprinkle with cilantro and simmer for 5 minutes. Serve.
