India   -   Spinach With Chickpeas   adapted from Saveur

Ingredients
  • 1 Pouind Fresh Spinach -- trimmed
  • 2 Tablespoons Butter
  • 3 Tablespoons Olive Oil
  • 4 Medium Yellow Onions -- chopped
  • 3 Inches Ginger Root -- chopped
  • 7 Cloves Garlic -- peeled
  • 2 Teaspoons Turmeric
  • 1 Teaspoon Cumin
  • 1/2 Teaspoon Coriander
  • 1/2 Teaspoon Cayenne
  • 1/2 Teaspoon Cardamom
  • 28 Ounces Tomatoes
  • 2 Cups Chickpeas -- undrained
  • Salt And Pepper -- to taste
  • 1 Lemon Lemon Juice
  • 1 Medium Serrano Pepper -- minced
Directions Blanche spniach in large pot for 2 miutes. Drain in cool water, squeeze out excess water and chip. In large pan, saute onions and serrano in butter & oil until brown. Puree in food processor the ginger and garlic then add to onions, simmer 10 minutes. Add spices and tomatoes, simmer 5 minutes. Add spinach and peas, simmer 30 minutes, adding water as needed. Garnish with lemon juice.
