Indonesian - Grilled Fish In Coconut Sauce (Sawu Island)

Ingredients

- 1 Teaspoon Salt
- 1 Cup Water
- 2 Pounds Fish Fillet -- sea bass, snapper
- 3 Large Shallot -- sliced
- 2 Cloves Garlic -- sliced
- 3 Teaspoons Crushed Red Pepper
- 1/2 Teaspoon Turmeric
- 1/3 Inch Ginger Root
- 1 Teaspoon Ground Coriander
- 1 1/2 Cups Coconut Milk
- 1 Tablespoon Brown Sugar
- 1 Inch Galangal -- finely chopped
- 1 Teaspoon Lemon Grass
- 2 Tablespoons Tamarind Paste -- dissolved in
- 1/4 Cup Water

Directions

Dissolve salt in water. Make 3 slashes in fish and soak in salted water for 15 minutes. Drain. In food processor, blend shallots, garlic, red pepper, turmeric, ginger, and coriander to form a paste. Mix this with coconut milk, brown sugar, galangal, lemon grass and tamarind liquid. In a saucepan, bring the mixture to a boil and cook over moderate heat for 10 minutes or until about half of the liquid is evaporated. Dip fish in coconut sauce and grill under a broiler for 10 minutes on each side, basting generously. Serve with rice.
